Q:
Why do multiple emails (conversations) show up in my reading pane? How can I change this?
A:
By default, Outlook Web App enables "conversation view." This setting groups related emails and will show a list of messages from the same conversation underneath the email being read. Clients may be familiar with this setting from using Gmail. This view can be useful to read through multiple emails on the same topic without having to search.
However, many clients are uncomfortable with conversation view. It can be turned off in OWA by clicking the drop-down menu next to "Arrange by" and unchecking Conversation at the very bottom.

See "Conversation View" here for a client-facing guide on turning on and off conversation view.
